Heraldry is the science of blazonry, that is, of the representations that appear on shields, both medieval and from other eras.

Hermantics is the discipline that studies the coats of arms of a family, dynasty, institution, or locality. It's important to know that coats of arms are not inherent to surnames. It is individuals, families, and institutions that adopt or inherit a coat of arms. Many families may share the same surname but have different origins, and therefore do not all have the same coat of arms. In short, there are lineages that bear coats of arms, which can be inherited.
